My name is Stephanie and I was diagnosed with type I diabetes when I was eleven. It was a very hard transition for me and one of the biggest challenges I faced was finding low-carb recipes that I enjoyed eating. Over the years I have created a stockpile of recipes from various sources that I really enjoy and I think my visitors will enjoy too.
The purpose of this site is to prove to visitors that low-carb recipes can still be delicious. Unfortunately, type I diabetes is not something that can be reversed, but you can make the most of it by preparing delicious, diabetic-friendly meals like the ones available on this site. I welcome any feedback or contributions that you may have.

Breakfast
It’s important to start your day off right with a delicious and filling breakfast. An unfortunate thing that many diabetics including myself encounter is insulin resistance in the morning, therefore many of the breakfast recipes I feature are low carb. Please enjoy these recipes and feel free to leave tips on how to make them better or add a few of your own recipes in the comments.
Lunch
This page provides several lunch recipes and ideas for type I diabetics. Many of these recipes are low carb, but still have the flavor one craves for their afternoon meal.
Dinner
After a hard day at work, it is nice to come home to a meal you actually want to eat. It is my hope that these dinner recipes serve as meals you will want to sink your teeth into, please enjoy!
Sides
Sides are an important part of any meal. If you have a great main dish, but a poor side dish it can ruin the entire course. The side dishes posted on the following link are tried and true and guaranteed to complement any dish.
Dessert
Dessert is something many diabetics crave and miss. I must confess that I do not have a lot of diabetic dessert recipes, however it is my hope to create an interactive website where I can share my recipes and inspire new ones to be created. Feel free to add any of your own recipes through the comments.
Snacks
Snacking for diabetics can be hard to do when one is surrounded by carbtastic foods like chips or candy. Click the link below for snack recipes and suggestions when you are craving something good on which to munch.
